Bacteriocins are used as food preservatives to prevent the development of pathogenic and deteriorating microorganisms. Because bacteriocins are natural proteins, their use as an alternative to chemical additives is promising, since such additives are seen as villains in the food industry because of the potential risks posed by the constant ingestion of such substances.

SOLUTION

A presente tecnologia compreende bacteriocinas, mais especificamente o peptídeo antimicrobiano LeuA1, e respectivo processo de obtenção, bem como uso composto como conservante biológico natural de alimentos, uma vez que são capazes de inibir o crescimento de bactérias Gram negativas e não apresentam toxicidade que interfira no consumo humano dos produtos.
