The development of new technologies for the efficient use of waste has been a growing concern every year, since most agribusinesses generate, in addition to the final product, a large volume of by-products.
The proposed invention describes an economically attractive process for obtaining amylase via solid state fermentation. It uses a wheat bran-based culture medium supplemented with low-cost salts and the fungus Rhizopus microsporus var. oligosporus. This method yields enzyme yields higher than those currently available, as well as simplified execution, low cost and food safety.
