Currently the monitoring of the yeast population in fermentation processes is carried out by molecular identification techniques, which techniques require specialized labor and have a high cost. This new technology develops a culture medium capable of monitoring and identifying the yeast colonies in fermentative processes, guaranteeing accessibility of the methodology in different industrial sectors that use this process.
The present technology provides the monitoring and identification of yeast colonies in fermentative processes without the need for molecular identification techniques, leading to greater industrial autonomy, simplicity and economics in the analysis. Other benefits that stand out are the easy manipulation of the technique, affordable cost, reduction in waste generation and reduced analysis time.
